Sometimes the only excuse you need for a drink is an ordinary Sunday morning surrounded by family. Sangria always reminds me of summers in Spain, and considering it’s summer in Puerto Rico all year round, I’m heading out to the terrace for some hammock time in the sunshine with a cool glass of peach bellini sangria.
Peach Bellini Sangria
An Italian cocktail meets a Spanish punch in this fruity Peach Bellini Sangría with Catalan cava, plums, limes and peaches.
1cuporange juice, chilled
2cupspeach nectar, chilled
3peaches, sliced in wedges
2plums, sliced in wedges
2limes, sliced in rounds
1bottle of rosé cava or champagne, chilled
In a large pitcher, stir together orange juice and peach nectar with sugar until sugar has dissolved. Add in peached, plums and limes. Refrigerate until ready to serve.
Just before serving, add chilled cava or champagne to the pitcher and serve in large wine/sangria glasses. Ice optional.
If using canned peaches, omit the extra teaspoon of sugar.
